Picked on the same day, we loaded these grapes all together into open top new French puncheon. Aged for 4 1/2 years in the same puncheon. Bottled in 2022.

Dense, dark ruby in color. Seductive and delicate perfume on the nose, yet with generous aromatics of red cherries, currants & rose petals. The palate is complex and layered, bringing ripe red fruits, fresh pencil shavings, petrichor, pepper, cinnamon and creme de cassis. The finish is mineral, balanced and long with a pleasing coating of dusty tannins. The co-fermentation serves to harmonize these varieties into a seamless and thoroughly enjoyable wine.

A follow-up to our 2018 'Wrought' Syrah - we went back to Les Collines Vineyard. Biggest difference between the 2018 and the 2019 is barrel age. The 2018, we bottled young, and then bottle aged for 30 months before releasing. We flipped the script for the 2019. We aged this wine for 30 months in neutral French oak barrels. Fermented whole-cluster and with wild yeasts.

Hand-picked syrah was harvested in the cool morning, and then are loaded whole-cluster into fermenters. After a 5 day cold-soak, we begin the process of foot crushing to help break down the berries allowing for a very gentle extraction. After 8 days, the native fermentation became active. After 27 days on skins, we pressed and racked to concrete egg and neutral barrel. No adjustments of any kind. Aged for 11 months and then bottled unfined and unfiltered. Two years bottle age before release.

56% Mourvèdre | 44% Syrah

Like our 2015 & 2016 this wine was blended in the vineyard. We harvested our Syrah and Mourvèdre on the same day. Gentle extraction techniques, native yeasts and a one month long extended maceration create a deep, dark, flavor packed profile.

Stillwater Creek Vineyard | 110 Cases Produced 

Hand-picked whole-clusters were field-sorted, lightly foot crushed and held overnight. The following morning we loaded the press cylinder and pressed long and slow. No SO2 was added. Juice from the press was pumped directly into 85% new French oak barrels and a neutral puncheon and carefully monitored. Native yeast fermented, the barrels were stirred only as needed to encourage the process. Primary fermentation lasted for 5 months. Native malolactic fermentation completed in July 2018. After an extended 22 months of total barrel age, the wine was racked and finished with a light polish filtration. Twenty four months in bottle before release.

55% Mourvèdre | 45% Syrah

Like our 2015 this wine was blended in the vineyard. We harvested our Syrah and Mourvèdre on the same day. Gentle extraction techniques, native yeasts and a one month long extended maceration create a deep, dark, flavor packed profile.

100% Chardonnay 

This Chardonnay is full bodied and forward on the palate, with hints of chalk and mineral salinity lingering behind heady aromas of citrus rind, beeswax and salted caramel with fresh cream and warming winter spice. A broad and layered entry is complimented by balanced acidity and a lingering, and clean finish.

Whole cluster pressed, barrel fermented in 75% new French oak. Native yeast fermented. Barrel aged, sur lies for 23 months. 18 months in bottle before release.
