64% Chardonnay + 36% Viognier - Cofermentation
The wine is plush, lush, broad and fleshy on the palate with unctuous notes of honey, crème brûlée, hints of pineapple and white flowers. There is clear evidence of the Dillon Chardonnay profile, but with added tension and lift from the Viognier.
We cofermented and barrel aged select press fractions from certain lots of Chardonnay, and our WeatherEye Viognier blocks. Neutral French oak. 22 months of cellar age, and one year in bottle. Native Fermentations. Whole Cluster Pressed. Full Malolactic. Unfined and Unfiltered.
The wine is slightly hazy showing our commitment to minimal intervention winemaking.
